Space Spuds is a SUNY Oswego collaborative business between Dr. Julia Tanner, former Astronomy professor at SUNY Oswego, and Auxiliary Services. Auxiliary Services was looking to expand meal options to students through a fun, quirky, and affordable food truck-based model. In early 2018, Dr. Tanner became interested in becoming a financial investor in this project after reading of Auxiliary Services’ plan in the Alumni newsletter.
After months of planning and creative brainstorming Space Spuds was launched. Dr. Tanner’s love of astronomy and all things intergalactic were combined into an eco-friendly food truck.

Why potatoes though? Dr. Tanner wanted to celebrate her Irish heritage and pay tribute to her roots which inspired her interest in space and astronomy as a young child. Her father and mother, to whom she accredits her strong work ethic to, owned a potato farm in North Leinster. She would spend hours staring up into the night sky, studying stars, and fueling her interest in the mysteries of deep space. Later in life, Dr. Tanner was an integral part of the 1993 movement to grow a potato in space.
Space Spuds cares about the environment and the community. Partnering with the Sustainability Office and local potato farmers, Space Spuds offers environmentally friendly dining options while supporting the local Oswego County community. The local growers uphold only the highest standards in sustainable farming practices.
Space Spuds looks forward to serving the students, faculty, and staff at SUNY Oswego. Space Spuds is grateful for the overwhelming support and enthusiasm from friends, family, and the community.
